Ingredients
  1. 1 1/2 lbs. red new potatoes, cut into bite sized chunks
  2. 1 tbs. extra-virgin olive oil
  3. 8 oz. turkey kielbasa, diced
  4. 1 bunch green onions, thinly sliced, white and green part separated
  5. 1 tsp. paprika
  6. 1 tsp. Italian seasoning
  7. 1/2 tsp. garlic powder
  8. 1/2 tsp. salt
  9. black pepper to taste
  10. 1 cup fresh baby spinach
  11. 2 tbs. water
  12. 3/4 cup reduced fat cheddar, shredded
Instructions
  1. Place potatoes in a pot fitted with a steamer pot or basket and cook, covered, over simmering water until tender, about 8 to 10 minutes.
  2. Heat oil in a large nonstick skillet over medium heat. Add kielbasa and white part of green onions and cook until green onions are slightly softened, 1 to 2 minutes. Add potatoes and sauté until browned, about 5 to 7 minutes.
  3. Sprinkle paprika, Italian seasoning, garlic powder, salt and pepper to taste over potato mixture while stirring to cover all ingredients.
  4. Stir in spinach and green part of the green onions. Drizzle water into skillet, sprinkle cheddar over mixture, cover and cook until cheese is melted, about 2 minutes.
Notes
  1. A poached or fried egg is the perfect compliment to this dish.

 Since making this hash for the first time, I have made it many more times. It is my favorite breakfast right now.
