Pumpkin Spice Granola

Granola is one of my favorite foods to snack on. This was my first time to ever make it. My friend Anna posted about the granola she made and how easy it was so I decided to give it a try. She was right, it is super easy. I can say with confidence that I will no longer buy granola but instead I will make my own. I really wanted to add pumpkin seeds to this granola but could not find any in a single store I went to.

Ingredients
  1. 3 3/4 cups old-fashioned rolled oats
  2. 2/3 cup sweetened coconut
  3. 2 teaspoons ground cinnamon
  4. 1 teaspoon pumpkin pie spice
  5. 1/8 teaspoon salt
  6. 2 egg whites
  7. 1/2 cup pumpkin puree
  8. 1/3 cup pure maple syrup
  9. 1/4 cup canola oil
  10. 3 tablespoons light brown sugar
  11. 1 teaspoon vanilla extract
  12. 2/3 cup dried cranberries
Instructions
  1. Preheat oven to 325F degrees.
  2. You will need two large baking sheets lined with a silpat or parchment paper. Set aside.
  3. In a large bowl, combine the oats, coconut, cinnamon, pumpkin pie spice, and salt. Set aside.
  4. In a medium bowl, whisk the egg whites for about 1 minute or until white and frothy. While whisking, add in the pumpkin puree, maple syrup, oil, brown sugar, and vanilla. Whisk until completely combined.
  5. Pour the pumpkin mixture over dry ingredients and stir until dry ingredients are completely coated in the pumpkin mixture.
  6. Divide mixture onto the two baking sheets and bake for 45-60 minutes. Make sure to stir granola a few times while it bakes to keep it from burning.
  7. Let granola cool on baking sheets.
  8. Pour granola into a container.
  9. Stir in the dried cranberries.
  10. Make sure to store granola in an airtight container to maintain the crunch.
Notes
  1. Feel free to add any additional seeds, nuts, dried fruit, etc. you like.
