Ingredients
  1. 1/4 cup unsalted butter
  2. 1/2 cup onion, chopped
  3. 3 garlic cloves, minced
  4. 3 tbs all-purpose flour
  5. 1 1/2 cups chicken broth
  6. 1/2 cup fat free half-and-half
  7. 1 cup red potatoes, diced
  8. 3 cups chicken, cooked and diced or shredded
  9. 2 cans mixed vegetables, drained and rinsed
  10. 1 tsp salt
  11. 1 pkg pie crust (2 sheets)
  12. 1 egg, beaten
Instructions
  1. Preheat oven to 400°.
  2. In a large pot, melt butter over medium-high heat. Add onion and garlic. Cook until onions become translucent, stirring to keep from burning approximately 6 minutes.
  3. Stir in flour. Let cook for 1 minute while stirring constantly.
  4. Slowly pour in broth and half-and-half, stirring until combined.
  5. Add potatoes. Cook for 12 minutes, stirring frequently.
  6. Add chicken, vegetables and salt. Stir until combined.
  7. Spray your baking dish of choice with cooking spray. (I used a pie plate.) Unroll one pie crust sheet and place on the bottom of a baking dish. Pour mixture on top of the pie crust. Cover the top with the other sheet of pie crust. Crimp edges down with the bottom sheet. Brush top of pie crust with beaten egg. Make 4 slits to the top of the crust with a knife to vent.
  8. Bake until crust is golden brown. Approximately 25 to 30 minutes.
